今天我要给各位讲一讲食品添加剂的问题。讲之前,我先给大家做碗排骨汤。请看,我面前的这排瓶子装了一些白色粉末,我要把这几十个瓶子里的粉末都混在一起,然后再把开水倒进去,搅拌一下。好了!排骨汤完成!谁愿意尝一尝?别害怕呀!就请这位勇敢的男士吧。

“啊,真的是排骨汤。真的很好喝呀!”

怎么样,这就是你平常吃拉面的那个汤吧!大家都看到了,我做排骨汤时根本连一根排骨、一滴真正的排骨汤也没用到,仅仅用了这些瓶子里装的白色粉末,而且尝过的人都觉得味道不错。这些白色粉末,就是我下面要讲的食品添加剂。

我们很多人都不清楚自己平常吃的食品是怎么加工成的。你以为骨汤拉面就是用排骨熬成的汤做的,你以为那些颜色鲜艳的果汁饮料都是用水果榨汁做的,你以为喝咖啡时加的奶精就是用牛奶做的……事实是,你眼睛看到的、嘴巴尝到的并不是真的,漂亮的颜色、诱人的味道都可以由添加剂变出来。

肉丸就是“丸子状的添加剂”

我原来是食品添加剂公司的首席推销员,业绩非常突出,经常为各个食品加工厂排忧解难,帮他们用最低的成本做出好卖的产品。比方说,我开发的一种肉丸。一个厂商采购了大量的肉碎,就是从牛骨头上剔下来的几乎不能称之为肉的那部分,黏糊糊的,水分多,根本没有味道,没法吃,不能做成肉馅,只能当宠物饲料。可是它非常便宜。我的工作就是把这些不能吃的肉碎变成能吃的东西。

首先,加进不能下蛋的鸡的肉馅,以增加分量。我们知道,养殖的鸡有蛋鸡,有肉鸡。肉鸡主要是吃肉的,而蛋鸡主要是吃它下的蛋的。 蛋鸡和肉鸡的肉差别就很大,价格也不一样。而且这里用的是已经不能再下蛋的鸡肉,价格就更便宜了。 接着,加入大豆蛋白,以做出柔软的感觉。这种大豆蛋白又称作“人造肉”,还用来做便宜的汉堡。光这样还不行,因为没什么味儿。于是又加了大量的化学调味料。为了使口感嫩滑,使用了猪油、加工淀粉;为了便于机器批量生产,使用了黏着剂、乳化剂等;为了使颜色好看,使用了着色剂;为了延长保质期,使用了防腐剂、pH调整剂;为了防治褪色,使用了抗氧化剂。

这样,肉丸就做好了。整个过程使用了二三十种添加剂,可以说,它是“丸子状的添加剂”。产品上市后,立刻受到孩子和***欢迎。

在这里,我要说的是,我使用的添加剂都是国家允许的,而且完全遵照国家规定的剂量标准。但存在什么问题呢?就是国家对添加剂的检验结果只是基于单种添加剂的使用情况得出的,如果一次同时摄取若干种添加剂会怎么样,“复合摄取”的研究依然是个盲点。 也就是说,同时摄取很多种添加剂有无危险性、危险性的大小等,只能由将其吃进嘴里的消费者们来承受。

我为什么要站在这里讲这些事?因为,有一天,我亲眼见到我的女儿也在乐滋滋地吃我开发的这种肉丸。当我看到她吃的那一刻,我才发现我根本不希望我的孩子吃它们。我是知道添加剂的毒性问题的,可我根本没从实际出发考虑过,一直忙着用添加剂开发各种食品,那一刻,我才认清我开发的食品,黏糊糊的废肉和几十种添加剂做出的肉丸,也是要被我的家人我的孩子吃进嘴里的。我的心里充满了罪恶感。经过好好的反思,我辞去了食品添加剂推销员的工作。我要用我几十年“台前幕后”的经验,告诉大家一些食品的真相。

奶精就是“牛奶式植物油”

再说说奶精。很多店里配咖啡的奶精都是免费的,我经常看到有人临走时,顺手拿好几个,回家留着慢慢用。现在,我就要问问大家:你觉得奶精是用什么做的?牛奶吗?奶油吗?你不要看到“奶精”中有“奶”,就想当然地认为它是用奶做。其实,跟前面我做排骨汤一样,制作奶精的过程中没有用到一滴牛奶或奶油,它就是在植物油中加水、添加剂混合搅拌,做成的类似牛奶的东西。

其中的植物油,更具体说是氢化植物油,含“反式脂肪酸”。反式脂肪酸是不健康的成分,它对心脏的损害程度远远高于任何一种动物油。含有氢化植物油的食品都可能含有反式脂肪酸,比如饼干、面包、西式糕点、巧克力派、沙拉酱、炸薯条、炸鸡块、洋葱圈、咖啡伴侣、热巧克力等。但是,反式脂肪酸的名字有很多,一般配料表里标明“氢化植物油”、“植物起酥油”、“人造黄油”、“人造奶油”、“植物奶油”、“麦淇淋”、“起酥油”

或“植脂末”等,都含有反式脂肪酸。大家都知道,普通状态下,水和油是不能互溶的。这就要用到添加剂了。首先,使用乳化剂,它是界面活性剂,可以使油和水混到一起,乳化成像牛奶一样的白色。

但还不像牛奶那样黏稠,所以要用到增稠多糖类使其黏稠。然后要用到焦糖色素,把它染成极淡的茶色,看上去就像奶油的颜色。为了长时间保存,还要加入pH调整剂。另外,再加进具有奶油香味的香料。所以,奶精就是用水、油和若干种添加剂做成的“牛奶式植物油”。只要看看奶精的配 料表,就一目了然了。

果汁饮料“无果汁”

我曾经为幼儿园里的孩子表演制作“无果汁”的果汁饮料。柠檬饮料是这样做的。首先把黄4号溶于水,就变成了很漂亮的柠檬色。接着,再加入酸味剂——维生素C和柠檬酸。然后,注入一成多的果葡糖浆。这样,就变成了酸甜味。另外,要加进柠檬香料,那才是柠檬汁。最后加入纤维素粉末。纤维素是由“锯屑”做成的添加剂。通过混浊的颜色,营造出真果汁的那种感觉。

做甜瓜味饮料的话,甜瓜是绿色的,那么,先在水里加入蓝1号着色剂,把水染成纯蓝色。然后加入黄4号着色剂,水就变成了纯绿色。这两种颜色都是从石油中提炼出来的。

做橙汁饮料的话,用到的橙色是把虫子碾碎后提取出来的。

我把“调”好的饮料倒进杯子,问大家“要喝吗”,孩子们都面面相觑。 然而大家平常喝的饮料就是用这种方法做出来的。

以前,饮料里加的是砂糖,但砂糖的甜味太重了,孩子们不喜欢。所以现在换成了果葡糖浆。它的甜味很清爽,孩子们都喜欢。但果葡糖浆存在着让人恐惧的地方。那就是热量过量摄取的问题。果葡糖浆的主要成分是葡萄糖和果糖。葡萄糖是人体最基本的能量源,身体弱的时候最需要,我们生病时打的点滴里就有葡萄糖等营养成分。

但是,点滴里的葡萄糖浓度不足0.5%。而刚才介绍的粉末制成的“无果汁”果汁,500毫升里含有的果葡糖浆就超过60毫升。也就是说,大家平常喝的 500毫升的饮料里,10%以都是糖汁(糖分)。如果 转换成固体粉末,含有的葡萄糖超过25克,果糖超过20克,盛在盘子里会满满的。而且,喝了富含果葡糖浆的饮料之后,人不会觉得饱,仍然和没喝饮料之前一样想吃东西。

一瓶(500毫升)饮料里,含有相当于50克砂糖所含的热量,也就是200千卡(半袋薯片所含的量)。可是,人喝了之后却觉得跟没喝一样!显然就会引发热量的过量摄取。

已经有科学实验证明,经常饮用清凉饮料,可能促进糖尿病的发生。美国的一项追踪研究报告表明,如果每个孩子平均每天喝一罐碳酸饮料,体重超重的可能性就会增加60%。近年来,肥胖以及患有糖尿病的中小学生人数明显增多,就是一个很好的说明。

很多我们喜欢的食品的味道,其实是添加剂的味儿。食品加工的信息没有被公开,大部分人天真地相信“一流厂家生产的东西没问题”、“大型超市销售的东西不会有错”,我们的舌头正在被食品添加剂破坏着还不自知,这真是很可悲。

100千克猪肉能做出130千克火腿

大家一定很奇怪:100千克猪肉怎么能做出130千克火腿? 可是,如果我不问的话,大家在买火腿肠的时候,可能都不会注意和比较:多出来的30千克是什么?就是用来增加分量的黏性材料。要增加分量,花费不多、最便捷的方法就是加“水”。所以,食品界里有“注水火腿” 这种说法。这是一种为了在价格战中生存下来而采取的战术。但是,如果直接把水加进去的话,肉就会变得稀烂。因此,要使用加热后会变硬的胶状物。 用100多支注射器同时往猪肉里注入专门的肉用胶状液体,那场景见过一次就不会忘记,太让人吃惊了。接下来便是滚揉,使注入猪肉的胶状液体均匀地扩散到肉的组织中去。注入的肉用胶状物的重量相当于肉总重量的20%-30%。滚揉后肉变得鼓鼓的,然后经过成形、加热等程序,最终变成市场上销售的火腿。为了使增加的部分保持色泽和弹性,还必须注入其他的添加剂。注水火腿的价格十分便宜。超市促销特价的火腿大都属于这一种。在欣喜地将特价品放入购物篮里之前,请看看产品配料表,动脑子思考一下。本来火腿

“健康的”漂白藕

有一回,一个厂商找到我,他进了一大批藕。我们都知道莲藕的营养价值高,是很健康的食物。可是他买的藕非常便宜,外表全都是黑的。他就不知道该怎么办了,向我求助。像这种情况,只要使用添加剂,一切都将迎刃而解。先用漂白剂把藕漂白,再加进一些添加剂以防止变色。然后,把藕装到袋子里真空包装。

包装好之后,这个厂商就马上把货品发给了超市出售。结果,出现了新问题。藕从边上开始腐烂,有的黏糊糊的,有的变黄,有的变黑,什么样的都有。超市向他索赔,他又向我求救。

我告诉他,这是因为他给真空袋子加热杀菌的时间和温度都不够。只要严格控制加热消毒的过程,就没问题。按照这个方法执行之后,超市再也没有找过他麻烦,他的藕都变为“健康食品”销售了出去。

“健康的”消毒沙拉

很多办公室小姐“为了健康”买来袋装沙拉作午餐。也经常会有家庭主妇在家做蔬菜沙拉,用超市卖的切好了的蔬菜。不仅是因为省了切的功夫,而且切口的地方不管何时都不会焉,可以长期保存。

Malacca Umbai Medan Ikan Bakar

Went to Malacca Umbai Medan Ikan Bakar. The place is on the way from Malacca Town to Jasin/Muar. Coming from Malacca, look for Esso petrol station on your left. The medan ikan bakar is just opposite of the station.

Since it was the start of school holiday, quite a crowd were there when we reach at the place.

Parking is RM1 per car per entry. New thing for me since the last 2 times I went there, I just park along the kampung road before the medan.

The were 12 stalls numbered from…well, 1 to 12. That were the older stalls. As you walk by the stalls, the operators will wow you and try to get you to try their stalls. As to which stall to choose from, no idea since everyone look the same for me. So eat at the one you like.

Instead we walk to a new stall by the sea side. Great view and big crowd so we thought the food will be ok there.. emm..

Here is what we ordered.

Ikan Pari Bakar Sos Cili. Sauce is abit of the spicy side. Fish is fresh but abit burn out, though.

Sorry if the pictures are not in order. Still not feeling well from cold. In the whole the ikan bakar and food are so-so. One good thing is the sea view and windy sea breeze. And chance to get together with friends is priceless. Wait til our next food adventure.
